Xiao Bao Biscuit is exploring new markets across the Southeast, but co-owner Joey Ryan says the restaurant will maintain its Charleston address.
“We are at home in Charleston,” Ryan says. “This place is and always will be the heart of our company.”
As first reported by the Asheville Citizen-Times, XBB is considering opening a restaurant in a vacant gas station just north of downtown Asheville. Ryan says sous chef Patrick O’Cain, an Asheville native who previously worked at Curate, “will play a greater role in the company because he has been a huge part of our success here.”
The Citizen-Times quoted O’Cain as saying expansion is at a “purely speculative” stage.
“Folks ask us when we are going to expand to other cities, or create a chain of XBB,” Ryan says. “ I tell them to think of us as a band (and) this being our first album. We may open more restaurants, and the style we bring to each may have a common thread, but we do what we do because we love the process and appreciate the profit that may result; Not the other way around.”
“No franchise stores for us,” he concludes.
